Healthy Berry And Banana Protein Pancakes With Maple Syrup

Get ready to live and breathe #errydayischeatday because this pancake recipe from Healthyroo’s partnering nutritionist Rebecca Gawthorne is equal parts nutritious and delicious.

Ingredients

2 bananas, mashed
1 cup plain rolled oats
1/2 tsp baking powder
1/2 cup soy milk or other milk of choice
1/2 tbs olive oil + extra for pan
2 scoops of protein powder (I used Healthyroo ZEST SLIM for this recipe)
1/2 tsp cinnamon
Drizzle of maple syrup
Dollop of coconut yoghurt
Strawberries & blueberries to top

Method

Place oats in a high-speed blender and blend to until oat flour forms. 

Place mixture into a mixing bowl with baking powder and cinnamon, and combine. Add in Healthyroo ZEST SLIM.

In a separate bowl, combine mashed banana, milk and oil and then combine with the dry ingredients and stir until you have a texture like pancake batter. 

Heat a lightly oiled frying pan over medium. Spoon mixture onto the pan until desired serving size.

Cook the pancake/s until the edges caramelise and the middle bubbles, then flip over and cook other side.

Remove the pancake/s with a spatula and serve hot topped with strawberries, blueberries, yoghurt and a drizzle of maple syrup. Enjoy!
