Jamie Oliver's Chicken With Roasted Grapes Shakes Up Your Usual Weeknight Menu

There’s only so many times we can have chicken tenders, pan-fried chicken breast, or roasted chicken thighs before we start to crave some more exciting flavors. Jamie Oliver‘s wine-braised chicken with roasted grapes is the ultimate solution. The recipe starts with a whole roasting chicken, which is one of the more affordable meats on the market, but adds tons of exciting flavor by way of wine and juicy grapes that burst with sweetness and acidity after roasting along with the meat.

To start, you’ll need to cut your chicken into eight pieces – two thighs, two breasts, two legs, and two wings. Then you sear the chicken pieces until browned, which adds a deep, savory base of flavor to the dish. Oliver has you make the chicken in a large stock pot, then transfer everything into a roasting pan, but we recommend just using a Dutch oven, like this one from Tramontina, to begin with to save on dishes.
After searing the chicken, remove it from the pan. Then, sauté the veggies, add the chicken back to the pan, and deglaze the pan with the wine.
After the wine has reduced, add the potatoes and chicken stock, and pop the whole dish into the oven (this is where Oliver would have you transfer everything to a separate roasting pan, but if you started in a Dutch oven, you won’t need to!).
Add the grapes to the Dutch oven for the last 20 minutes of cooking, drizzling them with olive oil and roasting until they’re caramelized. The caramelized grapes have a sweet, tart flavor that wakes up the rest of the dish, adding a liveliness to each bite that’s welcome if you’ve had one too many roast chickens with gravy in the last few months.
The meal is fancy enough to serve company or to make for a date night, but it all comes together in just over an hour, and if you take our advice and make it in a Dutch oven, it’s a one pot meal to boot. Winner, winner, chicken dinner, right?
