7am I wake up and have a coffee. I'm really into coffee.
11am Bruschetta with good tomatoes; I've found a really nice seed bread that goes with it. My partner's family is Italian, so I'm trying to ingratiate myself with them with this dish!
3pm Tasting food at the restaurant. As a chef you're constantly tasting bits of stuff but I don't really eat a full meal.
4.30pm I walk down to the sea for a surf and swim, and afterwards I'm starving! I eat a wholemeal pitta bread with chorizo, rocket and balsamic vinegar, then back to work.
8pm Home for dinner; tonight my partner makes a simple yet great tuna pasta.
10pm A bowl of nut-cluster cereal before bed. I'm trying to drink more water than coffee, so I have a good amount before bed from the refillable water bottle I carry around all day.

Top marks for… Carrying a refillable water bottle. It's important to make water your main drink. You're also reducing single-use plastic, not to mention the energy wasted in bottling and distributing water.
If you keep eating like this you'll… Potentially impact the quality of your sleep. Eating before bed doesn't give time for your stomach to empty before lying down. This increases the pressure on the muscle between the stomach and oesophagus, making heartburn and indigestion more likely. Your body is also digesting through the night without a break.
Why don't you try… Eating more during the day so that you are not hungry late at night. Perhaps a bigger brunch, with eggs and a few vegies added to the bruschetta, or whipping up a liquid meal of oats, yoghurt, nuts and berries that you can sip on during the lunch service.
